Split Pea Soup
by John Ruhland, ND

Rinse and boil 1 cup green split peas in 5 cups of water
Add:

  • medium sized chopped onion
  • 3 medium sized carrots
  • 1-2 pieces of celery
Cook for about one hour at low heat or pressure cook for about 15-20 minutes. Turn off heat and allow pot to sit until soup temperature is good for eating. The extra time is needed for the peas to soften fully.

CAUTION: be sure to turn heat down once pressure is built up in pressure cooker, or you will have a mess to clean up, or peas may boil up and clog steam outlet.
