Split Pea Soup
by John Ruhland, ND
  • 5 cups of water.
  • 1 cup rinsed green split peas.
  • Bring to a boil.
    Add:
    • Medium-sized, chopped onion.
    • 3 medium-sized carrots.
    • 1-2 pieces of celery.
  • Cook for about one hour at low heat, or pressure cook for about 15-20 minutes.
  • Turn off heat and allow pot to sit until soup temperature is good for eating.
The extra time is needed for the peas to soften fully.
CAUTION: be sure to turn heat down once pressure is built up in pressure cooker, or you will have a mess to clean up, or peas may boil up and clog steam outlet.
